Wolf or Thermador steam ovens and which convection oven?
Comments (3)I have the Thermador steam oven. Like it. The electronics panel did die after a few months, Thermador replaced immediately. The reservoir works fine. I've never cooked anything that required more than one carafe full of water. Wolf touts the ability to fill the reservoir while cooking. Comments (17)Agreed on the black. It looks punchy without the silly associations. Greasetrap, yes, I think your wife will like the steam once she learns to use it. Having to deal with the tank does make it less convenient, so part of it depends on how she feels about carrying water (esp. if you're not around to help), attending to appliances, etc. Re tending things in the steam oven, the biggest thing is that you learn not to. If you do need to, you take out the pan, and close the oven. Yes, you let out the steam, but it rebuilds pretty quickly, at least in my Gaggenau. There may be other differences in using the Wolf, as well, but generally things don't need to be stirred, rotated and turned over nearly as much with just convection heat and steam. And one lets the steam do the basting. Results are best in the sheet pans that the oven comes with (and similar). Blanching green beans is dead easy, but I do take the time to lay them out neatly. One or two more that don't fit are okay half on top of others, but basically, I keep them in one flat layer. Same thing with a chicken. If I want to do a whole roast, I remove the spine and flatten it. That way only the inside and backs of legs face down. I also like to elevated it on a bed of root vegetables so it's above the sides of the pan. If I didn't want the veg, I'd use a rolled edge sheet pan instead of a sided one. Comments (6)We bought the Miele Combi Steam in addition to a 30" wall oven, and it is our "Go To" Oven. Use it daily. It is very versatile and being a smaller oven heats quickly. All of our baking dishes fit in this oven. It operates the same as our 30" wall oven plus the combi steam function. It is awesome for reheating leftovers/baking bread/used as a regular oven/steaming veggies- rice etc. The Miele has a broiler unlike the Wolf - not sure of your configuration but you might want to compare the Miele with the Wolf. There are several threads on these two products. Regardless of which oven - you will be happy going with a combi steam oven. Comments (23)The worse installers and product ever. Had whole kitchen installed and they never hooked up the water lines to 3 ovens. They have been back at least 5-6 times and cannot get the combo steam oven working, its been a year and at least 30 phone calls to service, with promise of return and ok to swap out with a new one- 2 months ago- and still now one at Miele will take ownership of this issue and exchange the lemon. Incredibly poor performance for a company that bills themselves as the best product and customer service. Service managers refuse to speak with me, only front line folks (who are very nice). Go with Wolf- I spent $45K on Miele and I regret it ever since the installs 1 yr ago....See MoreMARK AMES
