disappearing prep sink - would this work?

I'm day dreaming designs for prep sinks that can be covered up and made to disappear, and thanks to the internet I know I'm not alone. The most common suggestion is to use a deep sink and a wall mounted faucet installed in the side of the sink, below counter level, and topping it all with a piece of butcher block that fits perfectly in the sink hole. (I haven't found too many images of this done. Would love to see yours!) I love this idea but worry about the water source being awkwardly low. Also I'd prefer to use quite a small sink (12x12 ish, max 12x15) so I'd have to find a very short-spouted faucet with water coming out at just the right angle.

Instead, what do you think about using an articulated faucet that could be "unfolded" to raise for use then folded back down to put the cutting board back on top? I got the idea when I saw this faucet:

It comes in a larger kitchen version as well. What do you think? Does anyone have this faucet - love it, hate it? Does anyone know of similar faucets that are less expensive or more traditionally styled?

I even thought I could do away with the handle and just use the faucet with a Tap Master foot controller (I might be getting carried away but I love cobbling cool stuff together and I'm willing to experiment a bit). http://www.tapmaster.ca/product/model-1775

The sink will be used for washing produce and hands, not much more than that.
