You can buy miso from Marukai Market on line, which is one of the Japanese markets that I go to here. I also go to Mitsuwa, which has a location in Chicago.

The myth that yellow tomatoes are lower in acid...is just that, a myth. Some are and some are not, and some red tomatoes are lower in acid than some yellow. Look for canned tomatoes that do not contain citric acid....most likely they will be imported from Italy.

I've only used MisoMaster, here, for years so i can't compare to other brands. I love all of them and stock a few of the smaller containers always. All markets near me carry it. It is US made and gets high 4 stars on organic vegan watch-dog lists. Perishable but lasts a year or more in fridge. They do have a 'lower' sodium but that will eat up 1/2 your daily sodium on a low sodium diet. The powders, jars, processed, all others that are not fermented, will not give you the same health benefits so it will be basically salt soup.

Miso butter is tsp miso, tbsp avocado or olive oil, fresh ginger and turmeric and any other pantry spice of choice. No salt needed. Fantastic on fresh corn on the cob or any veg.

Good miso should never be heated to boiling or simmered. Just under nice and hot. High heat destroys most if not all the good healthy fermentation.

Do you have Gerd or other acid reflux issues? You need a list printed out of what you can have. Along with a spice list for flavoring. I realize the obsession is on what you can't have. Everyone obsesses on that with restricted diets.

Many fresh garden grown tomatoes are low acid as Linda pointed out. You would have to grow your own. Or have someone grow for you then you could freeze in many ways. (...and note- most of those varieties are rather bland).

I'm sure a low-acid group forum is somewhere on the web. It is a very common issue. I have a couple co-workers that can't even look at a tomato. One friend swears by tomato powder so that may be an option. Not sure if that is balanced by some high-alkaline foods. A little goes a long way. If a simple soup seems to be missing something, just a tiny amount of tomato powder solves it.

Can you get the make "Mutti"? It's 100% Italian tomatoes and 0.2% salt.

Like i mention above, Miso should be in the refrigerated section as jars on a shelf have not much value being over processed. Basically buying salt and not good on a salt restricted diet.

Yes, you can buy good Italian tomatoes from Italy, in a can, but often very acidic. So that's no help. Might find some no salt added and low acid yellow tomatoes as they are popular fresh but the will not have the flavor of a nice red sauce. The ones in jars found on Amazon are very expensive.
