Cooking rack for pressure cooker?
Comments (1)I hope what you borrowed was a pressure canner rather than a pressure cooker? If not then freezing the beans is the only option. You can make a rack for the bottom of a pressure canner out of spare canning rings/bands laid in the bottom of the canner or you can use a cake drying rack or an inverted double layered aluminum pie pan with a bunch of holes poked into it or a folded kitchen/hand towel as a last resort. Comments (22)I was a little nervous about pressure cooking and started out with an electric one, but it was very limiting. It was very slow to heat up and I was unable release pressure quickly. It died within a year of purchase and was replaced, only to die again...I gave it up and went with a stovetop, and have been much happier with it. They are much easier to use, and much more flexible than the electric models. I can make things that only take a few minutes, like corn on the cob. I can bring the pressure up fast, cook 5 minutes and then quickly release the pressure in the sink with cool water, no overcooked mush and no vat of boiling water to deal with. I have two Kuhn Rikon pressure cookers with the turn tops. I like the turn tops because it's very easy to see the pressure level, and you can park it in the 'up' position to release the steam. I made a rump roast in one the other night that was beautifully tender in less than an hour. They're great for stock, too. Comments (12)Here is one of my favorites. A good friend of mine gave me this recipe after a long discussion on Pressure Cooking. I changed the name to Pork Roast Divine, because it really is. The drippings in the bottom of the pot make the best gravy, and I often use this as a base for my mother-in-law's homemade noodles, which made my Dad's (and husband's) favorite meal. This also makes incredible bar-b-cue pulled pork sandwiches, by adding bar-b-cue sauce to the pork. Pork Roast Divine * 3 lbs pork loin (boneless) * 2 cups leeks, chopped * 1 teaspoon olive oil * 1/2 teaspoon sage * 1/2 teaspoon dry mustard * 2 teaspoons paprika * 1/2 teaspoon salt * 1/2 teaspoon thyme * 1 teaspoon pepper * 1 onion, minced * 2 cups water * 1 (15 ounce) can chicken broth (or 2 cups homemade) * 1 minced garlic clove Sear the pork roast until nicely browned on all sides. Set aside to cool. Pour light olive oil into the pan and cook the leeks, minced onion and garlic until done, 3-5 minutes. Add 2 cups of water and the chicken broth to the pot to heat. Rub the roast with the spice mixture (sage, mustard, salt, paprika, thyme and pepper). Put the roast into the liquid in the pressure cooker and bring to pressure. Comments (7)I have an electric pressure cooker and use it regularly. I especially use it after roasting a whole chicken. I save all the bones & skin and pressure cook them with water and aromatics to produce really tasty and easy chicken broth. I've cooked beets, potatoes, and other hard veggies in it too. I make pork chili verde in it often. I will tell you this. The pressure of an electric is lower than a stove top cooker, as ci-lantro mentioned. That means that you need to cook things longer than what you'd normally do with your stove top version. Also, my cooker had a lousy recipe book with incorrect times for cooking. I eventually figured out how long a pot roast would take all on my own. Then I went searching for other brands and found the recipe booklet for Cuisinart. It seemed to have more realistic times.
