Prepping a difficult room for new paint - need advice

In a couple of weeks I'm heading up a team to repaint a couple of rooms in our church. The walls are a combination of old bead board (might be tongue and groove) and plaster. Both rooms date from around 1900.

Anyway, the first room we're tackling was painted about 9 years ago in the brightest yellow you can think of, not just walls and ceiling, but cabinetry and trim as well. It's truly horrible. As if that weren't bad enough, some misguided soul thought he could tame the yellow by painting dark s*** brown borders around all the cabinet doors.

All of this, including walls, was done in semi-gloss. It throbs.

So, a couple of challenges, i.e., knocking back the gloss to take a less shiny finish and priming the existing loud and contrasting colors. We'll be finishing with SW Antique White on walls and Kelly-Moore Swiss Coffee on trim and cabinets.

What do you recommend for a sensible prep strategy? All the work will be done by volunteers, and I need an overall rational plan.
