Roaster Over vs Chafing Dish ?

I have typically always used chafing dishes for serving food at buffets. We are doing a deal next week at a church that has 3 Nesco 18qt electric roaster ovens. Wondering if I should use these or lug our chafing dishes up there. We'll be serving linguine, Swedish meatballs, and Swedish meatballs.

These have no water basin so I'm concerned about the evenness of the heat around the pan and if food is more likely to dry out. Anyone familiar with these? Good? Bad? Avoid?
