Comments (39)bump on an old thread! i just canned a great experimental batch today: a "low sugar" strawberry jam with balsamic vinegar, black pepper, and cardamom. the cardamom was a variation on the wider-used balsamic/pepper recipe. I basically made the recipe on the package of the Sure Jell Low Sugar pectin box, but with the following variations: *mixed the fruit and sugar (half white/half brown) and let it macerate overnight *strained and brought the syrup to a boil, then let the fruit sit in the boiled syrup most of the day *then proceeded with the process on the Sure Jell box: added pectin, brought to full rolling boil for 1 min *I added 4 tbs balsamic vinegar, about 1/2 tsp fresh ground pepper, and 2 tbs cardamom to the mixture while it boiled then canned in a water bath like normal. turned out super tasty!...See MoreRECIPE: Looking for 2-5 ingred desserts

Peanut Butter Meltaways 24 oz bag of white chocolate morsels 18 oz jar peanut butter 12 oz bag milk or dark chocolate morsels Butter well a 9 x 13 metal pan In microwave, melt the white chips stirring every 40 seconds. A total microwaving time of about 3 minutes should have the chips completely melted and smooth. Stir peanut butter into white chips well. Pour into buttered pan. Melt chocolate chips. When smooth, pour over the peanut butter mixture and marble in fairly well. Refrigerate till firm enough to handle. About an hour should do it. Cut and remove from pan. Store in refrigerator. Comments (17)Sugar is a carbohydrate, last I checked... Furthermore, beware of the commercially prepared sugar-free products. Most of them contain Sorbitol which is sugar alcohol (but doesn't contain alcohol). It is a carb and a different kind of sugar but still, it is sugar. Everything that ends with -ol is sugar alcohol and a big no-no for the diabetics. Another thing is, lactose-free milk. This thing is good for the lactose-intolerant folks. The process of getting rid of lactose is adding a special enzyme to the regular milk, so that the lactose (milk sugar) is converted into 2 simple sugars, one of them is glucose. Meaning that it's best for the diabetics to avoid lactose-free milk altogether. Someone has posted about a diet with 250 carbs a day for the diabetic; to me it sounds a bit extreme. My carbs a day are as follows: up to 4 carbs a meal and up to 2 carbs a snack. 3 meals and 3 snacks = 18 carbs, give or take. I was told I can have an occasional candy. Comments (17)Meringue shells have been popular for generations, though not called pavlova. My grandmother and mother used to make them frequently, we just asked for merigue shells and several would appear! She would top them with fresh or frozen fruit. My British SIL would make a large meringue; that's where I first heard the term Pavlova. She would make it in the summer, taking advantage of the blueberries, raspberries, and blackberries they had in plentiful supply. I make tiny meringues when the girls next door need cookies to take to school....they have classmates who require gluten free treats. The recipe I posted in Casey's original post for a large meringue with pomegranate and honey is a huge treat. For something so simple and easy, they are so special....See More- 9 years ago
