Making Crème Fraiche : how to keep it warm while culturing?

My house is much colder than most houses. Average temperature is 65, less at night. Recipe said to keep it at “room temperature” of 70-75 degrees F. It would be done in 24-36 hours, depending on temperature. I want to serve it to top the pies for Thanksgiving. So, I will be cutting it close: I started culturing it about 3 hours ago.

I don’t have a stove with a pilot light, so that’s not an option.

I used a recipe that called for heating the cream to 105 first. I even preheated the pyrex bowl I will be culturing it in.

I thought I could provide a little encouragement / warmth by putting it next to my old-school 1970’s Salton 5 jar yogurt maker, turned on. (In this house, even the heated maker can’t yog without help unless it’s summertime : I have to place it on hotpads and wrap a thick towel around it.)

So, I laid out hot pads, put yogurt maker on it, then placed the bowl of culturing cream in front of it, with about 2 inches in between, then covered all with a bath towel.

But, I don’t know if this will be too much heat. There is nothing in the manual that says what temperature it gets to, and even if it did say, that would be the temperature under the lid or in the wells, not on the outside. I know the outside of it feels cozy hand-washing temperature warm when I touch it, which would be warmer than 70-75 degrees.

I could also...set the yogurt maker and the bowl of culture on an insulated cookie sheet, and hope the metal conducts the heat over to the bowl??

Suggestions?

Hope this works.

If it does, have any one you tried whipping the crème fraiche? Or just poured it / scooped it on?
