Frank, I got it from the same ultimate source, Dave Wilson Nursery. I got it through Bay Laurel Nursery, one of the other nurseries selling DW trees online. I owe another installment on the fruits. Wickson - this little apple has been excellent. It needs to hang until the background turns yellow. It keeps a long time. The taste is more like a stone fruit: sweet/sour like a plum and the aroma of peaches and apricots. Yum!! Myers Royal Limbertwig - A very nice apple on the sweet side with good aroma as well. It has the pendulant branch habit of many limbertwigs. Rambour d'Hiver - a large French apple which is pretty obscure these days. It is actually not that different from many American apples, e.g. Stayman Winesap comes to mind. Not a strong aromatic favor but a very good sweet/sour balance plus an exceptionally good crunch. Gold Rush - not too many apples this year but they are all excellent - hard, flavorful, with this unusual anise/spicy flavor. A truly great gourmet apple. The quality of the fruit has been very good. The tree did well except it gets cedar apple rust - not sure why this tree touted for such disease resitance is a CAR magnet. Most of my White Winter Pearmain dropped to early, I think the tree lacked water (it sits on a raised area). But, a couple hung on and they are really excellent apples -- something like a Mutsu but quite a bit more concentrated in aromatic flavors. My Geneva 3 hardy kiwis are coming in now, tons of 'em. They are ripening unevenly which makes harvest difficult. I don't like them until they have started to shrivel, they are too acidic before then. Fully ripened they are very good, a bit better than a good Hayward. I had a big harvest of quince and made various compotes, jelllies, etc. I don't know how big a fan I am of them, it takes a lot of quince to make jelly and I feel like I am just flavoring sugar. My wife made a baked quince recipe which was very good. If nothing else the quince will be handy as pectin for other jellies and jams. Scott

1. Mix them with sweet apples for pie (what my neighbor does) 2. Make "membrillo" 3. Paradise jelly (I've made almost 20 jars this year). 4. Preserves Linda Zeidrich's Joy of Jams has a few quince recipes, try doing a search on Harvest forum too. Here's my recipe (small batch, the original was a huge batch) for Paradise Jelly (apple-quince-cranberry): Paradise Jelly (makes 3 halfpints) I steamed the quinces a couple of days ahead and put the juice in the fridge. Didn't weigh them, but probably 5 lbs of quinces yielded about 7.5 cups of juice - or at least brown water (I'm not sure how much pectin was in the juice - I kept adding water to the pot while steaming.). I think the juice would have been lighter if I had simmered the quinces, or if I had a steam juicer, instead of trying to steam them in the oven - they oxidized. Then I did the apples and cranberries another day (just 5lbs of mixed apples, not all tart, most Golden and Red (?) Delicious since that's what I had. Got about 6 cups of juice from those.) Used a 12-oz bag of cranberries cooked until just popped in the hot strained apple juice, let drain in linen jelly bag for 5 hours, refrigerated juice and put the fruit pulp into a Ziploc bag with the apple pulp. I milled the fruit the next day, cooked with 1/2C of sugar, and made about 36 oz (pint, 12-oz jar processed 20 min and 8-oz jar in fridge) of cran-applesauce. I strained the apple-cranberry juice through coffee filters the next day. Now, for the jelly: Mix the quince juice and the cran-apple juice half and half (or whatever you have). Use no more than 4C of juice total, or this will set before you get it in the jars. Use at least a 6-quart (deep) preserving pan b/c it will foam up like crazy. Add 3C of sugar to the 4C of juice, I also added 1 tsp of bottled (strained) lemon juice. Simmer, stirring constantly, until the sugar is dissolved, then raise heat to a boil (make sure your canner is preheated with the jars sterilized if processing only 5 minutes). Boil until gel point (220 at sea level) or until jelly sheets from a metal spoon (remove from heat while testing). Quickly skim if necessary. Jar immediately, keeping ladle close to funnel. Do all 3 jars at once, then go back and spoon off any foam from the top of the jars, adjust the headspace to 1/4", wipe rims and put lids and rings on. DON'T use a bubble freer even if you see tiny bubbles in the jars - just wait til they rise to the surface and spoon the foam off. Process 5 minutes (for sterilized jars) or 10 min (for unsterilized) in BWB. The last jar you fill may have some small bubbles, and you might have an ounce or 2 left in the pan to put in the fridge. Rinse out the pan with very hot water and dry before starting the next batch - you don't want "threads" of old jelly in the new batch. This may set up very quickly (while you're ladling it into the jars) or it may take a couple of weeks depending on the pectin level of the juice. Set the cooled jars away on a level surface and leave them alone for 2-3 weeks before you decide you've made syrup instead of jelly. I tried reprocessing some and found that the top of the jar was liquid after a week, but the bottom was starting to set so I should have left it alone. The apple-quince jelly I made is taking longer to set than the stuff with cranberry in it.

This is one I copied into my collection of Quince recipes. (I haven't a clue as to who Joyce is anymore.) Quince Jelly scented with Vanilla Makes about 4 to 5 8-oz jars 4 lbs. quinces, cut into pieces â¨1 vanilla bean sugar â¨2 Tbsp. lemon juice Place the quince pieces and the vanilla bean in your preserving pot and add enough water to completely cover them. Cover and bring to a boil over medium heat. Simmer, stirring occasionally, for about 45 minutes, until the quinces are very soft. Mash the quince pulp with a potato masher and cook for another 5 minutes. Remove from the heat. Remove the vanilla bean. Transfer the mixture to a dampened jelly bag or a colander lined with a double thickness of cheesecloth. Let the juice drip through overnight. The next day, measure the juice; there should be about 4 cups. Discard the pulp. Prepare the preserving jars. In your preserving pot, combine the quince juice and 3/4 cup of sugar for each 1 cup of juice. Add the lemon juice. Bring to a boil over high heat and boil rapidly, stirring often, for about 20-25 minutes, or until the jelly tests done. Stir more often towards the end of the cooking time to prevent scorching. Remove from the heat, stir and skim off foam if necessary. Pour the jelly into hot, sterilized jars, leaving 1/2 inch head space. Wipe the rims clean. Seal according to manufacture's directions. Process the jars in a boiling water bath for 5 minutes. NOTE: If you cannot use a vanilla bean, substitute 1/2 tsp. pure vanilla extract, adding it just before the jelly is poured into the jars. Oh, I really envy you. Anything with Quince is great in my opinion. I love Quince Jam (not jelly), Quince marmelade, quince and lemon drinks, multiple quince and lamb dishes. I don't usually have a recipe for meat dishes, just mix things as it seems right :(, but something like in the attached link should be good. I do similar dish, but use fresh lemon juice instead of vinegar and terragon instead of rosemary and oregano. Olga Here is a link that might be useful: Lamb chop with quince
