Comments (24)Granddad i have seen that picture of your longbean trellis extension before. What would happen if you didn't add the extension? Would the beans just start to cascade back down? So far i think no one has mentioned pumpkin or watercress. Watercress is a classic veggie side dish at Korean restaurants here. Thais enjoy pumpkin which is not like the jack o'lantern Americans are familiar with. More like a winter squash or even more like a Japanese Kabocha. Check out this website i just surfed into yesterday, they sell Thai vegetable seeds although they are adapted more to a tropical climate and i am not sure about your zone. i have not ordered from them so i cannot comment on product or service. Kaffir lime is pretty much a must for Thai food. it is not frost-proof but it should do OK in a pot if you suffer from that affliction ; ) i have heard that this can be ordered from FourWinds if you cannot get it locally. Cilantro, Mint, Thai Basil have all been mentioned but if you'd like to get really authentic try herbs Culantro and Rau Ram. Oh and green papaya salad is pretty much classic Thai food. You can use unripe solo papaya but the real green papaya is large, long and used primarily as a vegetable. i've been looking for a seed source myself. Comments (25)I would suggest to anyone that is active in trading or wants to sell on eBay or whatever to look at the following website and view the restrictions and laws on a state by state basis for the states you plan to ship to. Every state's USDA has a mechanism to prosecute people that they happen to catch breaking their Ag laws. Whether they choose to is up to them. Many will just warn you unless they catch you doing something REALLY negative, like shipping citrus into or out of FL, or shipping soil over state lines from a state that is under Federal Quarantine for Imported Fireant (which is almost the entire lower tier of states in the USA and Puerto Rico). Its better to be safe than sorry, when it comes to your pocketbook, especially in these hard times. I know of someone a few years back who got caught shipping water lettuce and water hyacinth out of a state where they are banned TO a state where they are banned, and the fine was over $2000 per plant. Comments (15)If you have a PC I would use that, that way you're not throwing off the taste by adding more vinegar. The thing is finding a similar recipe to get the processing time from. Since it's a small amount of vinegar, even though it's a small amount of pepper too, how about using a PC recipe for plain (in water) peppers from UC Davis? You're not really concerned with the small bits going mushy, though I'm not sure what the high temps would do to the sugar. It might end up tasting a little caramelized. But if you increase the vinegar to 50:50 ratio, then you could safely BWB as in the sweet pickled pepper recipe, 1 Tbsp garlic is about 6 cloves, that's a lot for 1half pint (?) of sauce but you don't have the 7 lbs of peppers either. Maybe cut down the garlic? The Ball recipe uses 36 cloves for 9 half pints - not as much as the recipe above. Do you object to the red pepper flakes and prefer to use fresh chiles? Or is it too vinegary? As malna said, the garlic is the thing that makes it hard to acidify. Ball Thai Chili Sauce (from freshpreserving.com): 1/2 cup finely chopped garlic (about 36 cloves) 1 Tbsp salt 6 cups cider vinegar 6 cups sugar 1/2 cup hot pepper flakes 9 (8 oz) half pint glass preserving jars with lids and bands Directions: PREPARE boiling water canner. Heat jars and lids in simmering water until ready for use. Do not boil. Set bands aside. COMBINE garlic and salt in a small mixing bowl. Set aside. HEAT vinegar to a boil in a large saucepan. Add sugar, stirring to fully dissolve. Reduce heat and simmer 5 minutes. Remove from heat. Add garlic mixture and hot pepper flakes, stirring well. LADLE hot sauce into hot jars leaving 1/2 inch headspace. Remove air bubbles. Wipe rim. Center hot lid on jar. Apply band and adjust until fit is fingertip tight. PROCESS in a boiling water canner for 15 minutes, adjusting for altitude. Remove jars and cool. Check lids for seal after 24 hours. Lid should not flex up and down when center is pressed. Comments (6)Alohalani, Where in So Cal are you? If your in coastal So Cal it may take a bit for the purple/lavendar to pop a bit more. It maybe your camera but it looks a bit white pink. Its Eye and shape resembles Purpla Jack or Muang Jack. Sometimes in Thailand people sell things that they rename.
