Comments (8)"----Kenji is always fun to read.---" I agree. Also you learn a lot because he is a MIT graduate. But many times I have found very curious theories and suggestions, tests from him. This is one of them. If you dump cold eggs into boiling water, most of the time you will get burst eggs. Egg shells may be permeable, but the rapid expanding air inside from sudden heat will crack the shells. For instance, if he experimented with a ton of eggs, I would like to find out first: 1. Are all the eggs the same? There are many different breeds of chickens. Are the eggs from old hens or young hens? Do different diets make different eggs? 2. What is sticking to the shells? the membrane or the egg white? or both? When you have more than one variables in an experiment, but test only one, then you have an experiment which will give uninterpretable results. dcarch This post was edited by dcarch on Tue, May 20, 14 at 7:46...See MoreSuggestions for finger food, small dish to take to party (20-30)
Comments (67)Linelle, I was telling my DH about your post. Everyone was posting such intricate lovely appetizers and then you went with a fabulous shrimp from Costco. It made us both laugh. I wished I had a Costco nearby. I would be getting all of my party foods there! We are going to a Christmas Eve dinner and decided we would take a spinach dip in a bread bowl. My husband loves to bake and he practiced making one yesterday. I asked him why we don't just buy one at the grocery and he said he liked making bread! I thought that was pretty funny. We are also taking some nice big homemade biscuits. I do not see how one can go wrong with biscuits with your dinner instead of plain bread! I guess it is not a common thing to bring but I know I will gobble them up!...See MoreFood Safety — what steps do you take to prevent food borne illness?
Comments (18)Thread revival! The human gut can handle a lot. My dad and his sister grew up walking through the rice paddies to school. When they were thirsty they’d drink from the flooded paddies. Which were fertilized with, ahem, ”nightsoil”. They have very robust guts. When I grew up, we had essentially no food safety practices. Other than not cooking obviously spoiled food, zero precautions were taken. I didn’t have any particular gut illnesses as a kid. My dad didn’t believe in cleaning wounds either. If I got a scrape or cut playing with rusty metal in the vacant lot, he recited ”good clean dirt”. I didn’t have any wound infections. SWMBO grew up in a normal middle American household and thinks microbes should be bleached and soaped to extinction. DD worked so many years in commercial kitchens that she is a martinet about food safety. So I have become conventionalized and now you wouldn’t be shocked in my kitchen. You might not be impressed - DD isn’t - but you’d sit down for a meal without fear....See More- 9 years ago
