Casing an opening where plaster jamb has inconsistent width

We are renovating a 1920s house and want to add casing to the openings between the living room, dining room, and kitchen. Our contractor pointed out that the jamb (I think that's the right term--the flat part inside the opening, where a door would be if there was a door) are of inconsistent width from the top to the bottom since the walls are plaster. He said the way to handle this for trim purposes is just to add the casing trim to the outside of the opening and not add a separate piece of wood to the jamb, since it wouldn't be the right size. I am concerned this will look weird. Does anybody have advice? Is this the right approach? Thanks very much!
