Advice on Replacing Vaulted Ceiling with Flat

I am about to replace the vaulted ceiling in my kitchen with a flat ceiling. I’ve taken down all the old ceiling drywall and insulation batting from between the roof rafters/jacks (the ceiling was built on a hip-and-ridge), and am about to begin framing the new ceiling. The roof design (imagine a “lean-to”) is such that framing of the new flat ceiling will result in a roughly four foot high by twelve foot long section of abandoned drywall on the high (ridge-side) wall above my ledger board. There is insulation in that section of wall, and attic space on the other side.
My question is this: would it be OK to just leave the abandoned drywall in place, or should I take it down and if so, why?
