Water softener, yes or no? San Antonio, TX

We're putting in an addition, adding a 3rd bathroom and bar sink. Our 1890s house had all new plumbing put in 12 years ago, but no water softener added. My plan was to install one now.

Our local water has 15 to 20 gpg. I use bottled water to drink and in the coffee maker. We've never used the ice maker, but are about to get a new fridge with a water/ice dispenser and ditching the bottled water. We add vinegar to the dishwasher regularly, which helps, but glasses definitely get spotted/stained.

I grew up with a softener in the 70s/80s and hated the feel of never getting soap off. But my concern is the plumbing - if we leave out the softener, will my pipes eventually get completely corroded? I don't mind cleaning shower heads and assorted things easy to remove periodically. Vinegar works well, but am worried about the new fridge ice/water dispenser.
