Speed Cook oven vs. Convection/Microwave
Comments (29)First I work in a deli and use a high speed commercial Blodgett convection ovens also use induction ranges. I cook at home every Sunday a large enough meal to feed 4 for the week, even though my daughter is as thin as a toothpick my son more then makes up for it (now 6.4" about 240) I've had the advantium for close to 20 years at home, my first was the 120v. It was a nice speed cook, a little weak microwave (only 900w) but general cooking times were much faster then conventional/ convection oven, especially casseroles, lasagna, scalloped potatoes etc... worked great! My oven was the Jenn-air, but I found to be too much to deal with cleaning to use any of the accessories Grilling frying etc, so it was really a waste of money in my new home I just have a convection oven with my Advantium. When I moved I added the Advantium 240v. even faster cooking, 1100w microwave & many more auto selections. I use my toaster oven for pizza, comes out a little better and my toaster oven is also convection so only takes a few minutes longer. The only time I use my lower oven is for holiday cooking turkey, or large roast, but even a roast alone I just use the Advantium in convection, I'll sear in large pot w/shortening, then convection in Advantium. The Advantium will sear but hot oil is faster method, and wont start cooking the meat, also searing gives off a lot a splatter. Same for steaks the splatter not worth it, a mess to clean, I just sear in pan on stove then auto cook in Advantium. I'm about to replace my Advantium (mines getting worn out). Comments (8)The Speed oven is our only microwave. We really haven't run into a situation where this is a problem. As you probably know, most things that you "Nuke" don't take all that much time, but it usually a rare occasion where I would say, --- bake a potatoe and then nuke something else after that, but again if I did, most likely the potato would still be hot by the time whatever I nuked was done. Like most of the Posters on here, we tried to pick the best appliances for the job rather than get all appliances of the same brand. All our cooking appliances, (Cooktop, Oven and Speed Oven) are Elux Icon as is the wine fridge. Our fridge is a Jenn-air 48" SXS built in and panneled,we like it because of it's variable speed compressor, its works are above, making it easy to change the water filter and vacuum out the dust --yearly, (dust & cat hair less likely up there rather than at floor level). We like the digital controls for it--it has 3 sets of these controls--so you can set 3 different temps in the fridge--(one for main compartment, another temp for the "Chrisper" and a 3rd temp for the meat keeper. All have digital readouts which display the actual temps of those areas (Instead of just what you have them set for). Fridge has been quiet and trouble free for over 4 years now. For a while Elux was getting many negative reviews on their fridges (circa 2006-2009) and some folks here have started buying the newer (2010) Elux Fridges--but too early to tell yet if Elux solved their Fridge Problems, so "at best" you would be exploring "Unknown territory". Pretty much the same for Elux Dishwashers---not much info yet. We went with the Miele Optima Dishwasher because , at the time (2005-2006) it was the only DW with the top cutler tray (That was a "Must Have" for wife and I)--We both hated digging silverware out of those "dern Low baskets" Anyway, as you probably have seen , from my "Many posts", we have been very happy with the decisions we made as far as kitchen appliances, and all have met or exceeded our expectations--particularly the induction cooktop. Comments (4)Speed oven should allow you to adjust both the temperature and microwave power for the food being cooked. A convection microwave may not do this. That is, it may use only 1 or two temperatures and microwave settings together with no ability to change them. I havent looked at the Bosch in a while, but memory is that there are several menu choices to chose from. The GE Advantium has (I think) over 100, and all can be changed....See Moreplllog
