Frozen,refrozen meat

I normally shop for meat at my local butcher, expecting better quality and freshness than the local grocery store, also i buy in bulk and vacuum seal everything...

While in the butcher shop the other day,i noticed a worker who had an obviously large piece of frozen meat on the band saw, slicing steaks.I could tell by looking and hearing, that it was totally frozen solid.I asked the butcher about refreezing thawed meat,to which he replied,it's and old rumor and completely untrue.I asked this because i had just thrown out $300 dollars worth of meat because the freezer door had somehow opened in the middle of the night, leaving everything completely thawed...

So what really bothers me,other than the fact i thought i was getting better quality meat, was that i got to thinking... If he gets it in frozen, processes it,thaws it,then i come in,buy it and freeze it again,it has been frozen and thawed twice!

I have read about how ice crystals form when meat is frozen and how it pierces the meat, then when it thaws,a lot of the moisture in the meat seeps out from the thawing ice crystals, resulting in drier meat.Doesn't sound like quality if i do it twice to a nice steak!

Any opinions on this, has anyone ever had similar occurrence?
