Comments (33)Mine is not the instant pot brand, but I do have an electric pressure cooker. In fact, I have TWO! One is smaller, and perfect for cooking for the three of us. The other is larger so I can make bigger batches of broths and such. I use it of course to make broth, soup, stew, and so on. If you google hip pressure cooking, she has instructions for making pasta dishes that worked out very well for me. The sauce and noodles cook together and they turn out really good, take almost no time. I also use it to make boiled eggs, that peel no matter how fresh (and I am talking straight from the chicken here). 12 eggs on the rack, 1 cup of water, 6 minutes high (or low) pressure. Release pressure when done, then place eggs directly into ice water. I have used both pressures and not found a difference. Comments (18)Jerzeegirl, I'd jury-rig a sling for the INSIDE of that 6 x 3 pan. For example, make a wide sling out of foil and put it inside the 6x3 pan so it overlaps and flaps over the pan. Then, line the pan with parchment over the foil sling and make the crust and press it into the parchment on the bottom, and then make the cheesecake batter and pour that in, too. You'll have to run a knife around the edge in order to help get the cheesecake out of the pan. If you think the crust will only be on the bottom and won't go up the sides of the pan, then you can also cut more parchment into a nice long strip that's 3 inches tall, and put it around the sides of the pan so your batter will stay inside the parchment and not be pressed up against the foil sling. (or you can run a knife around the edge of the pan when it's done) With this foil sling, especially if it's wide for stability, you can just pull the cheesecake out from the pan you have, then peel away the parchment that's on the side--you'll still have the parchment circle on the bottom, but the cheesecake will be extricated from the pan. Using the trivet that came with the IP (make sure the trivet handles are UP!) is an easy way to lower the cheesecake into the IP, and when done, to carefully remove the cheesecake from the IP--just be sure the trivet handles are cool enough to touch. Be careful, though, because the cheesecake pan can slide! I hope I've explained it ok. If a visual would be helpful, google "youtube foil sling for instant pot" to get you started with the idea of things, but you'd have to make it suit your needs as I've tried to describe above. Comments (36)I have a funny story to share re instapot. Two years ago we started a massive kitchen renovation - I got my 6 burner Bluestar range, a walk in pantry, wall ovens - heaven ! Well, in the midst of it, DH discovers IP and started testing out Asian Indian cooking in it. Since we were kitchen-less for a longgg time and his engineering sense of precision to cooking naturally lent to IP cooking, I went along. Well here we are two years later and now we have 2 IPs (and threatening to buy a third small one ... for "those times when you we might need one ! LOL ".DH is turning into a IP-dictator whereby he automatically assumes that any cooking I do can be done faster and taste better in IP. It doesnt help that HIS instapot recipes are really yummy and a great hit with our boys and with friends ! Comments (24)I can't help you with accessories, the only one we've gotten is a steamer basket and we've never used it. The InstaPot is Elery's and I don't touch it because the minute I do, it will break. He mostly uses it for cooking the really tough cuts of beef, like neck roasts, for the dog, but he did use it last night to cook some fresh greens. 45 minutes in the InstaPot and they were still tough, but I think that was just the greens, which were fresh from the garden. Elery used the IP a lot when he first got it, but now he almost never does. Amanda would like to have one because they have a camper. It does have a stove, but it's nice to have something you can just sit outside on the table and plug it in instead of standing over the stove while everyone else is enjoying the outdoors. Her cousin has one and she uses it to heat water to wash the dishes when she takes it camping, but I think it would be useful for more things than that, LOL. Elery did mention a couple of days ago that we should get an extra silicone gasket, apparently those take on odors that won't wash out. CC, I don't "do" Facebook either.
