Comments (1)Bulbing onions - those that are supposed to mature into big bulbs with dried leaves around them like the ones you buy in bags at the grocery - are not mature if the leaves are still tall and green. You can harvest and eat them now as spring onions if you wish. But when they are mature, the leaf stalk will be all dried up and brown and may even fall over. Sometimes, however, onion plants make a flower stalk and go to seed without maturing. They are a bit tricky. Comments (13)Mrs. Dayton's Glazed Onions SERVES 6 ��" 8 Adapted from How America Eats (Scribner, 1960). Author and American food pioneer Clementine Paddleford first ate these onions in East Hampton at a Thanksgiving feast she described as being "as typical of Long Island as the breath of fog in the face, or an Island field of potatoes." Salt 4 lbs. small white onions (unpeeled) 1âÂÂ2 cup sugar 8 tbsp. butter, cut into pieces 1-2 sprigs fresh parsley Bring a large pot of water to a boil over high heat, then add 2 generous pinches salt. Add onions and cook until soft when pierced, 15-20 minutes. Drain onions in a colander and set aside until cool enough to handle. Peel onions by trimming root ends and slipping them out of their skins, then transfer to a large heatproof baking dish, spreading onions out in a single even layer. Preheat broiler. Put sugar and 2âÂÂ3 cup water into a medium heavy-bottomed saucepan, cover pot, and boil, swirling pan over heat several times, until sugar dissolves, about 5 minutes. Add butter and 1 tsp. salt and heat, swirling pan occasionally, until butter melts, about 5 minutes more. Pour sugar-butter mixture over onions and broil, basting and turning onions frequently, until onions brown and syrup turns pale golden, 20-30 minutes. Works great! I like mine shredded vs chopped 1/4 cup or more chopped onion 1 4 oz can green chiles, chopped ***I puree mine with my hand blender WITH juice 1 19 oz can navy beans, undrained 1 tsp garlic powder 1/2 tsp cilantro ***I use instead 2 tsp chili powder 1/2 tsp oregano 1/8 tsp red pepper Saute chicken and onions 4-5 minutes in olive oil **If using rotissorie, saute onions only till translucent Stir in spices, broth, simmer about 15 minutes, then add beans and shredded chicken and simmer 5 more minutes, to get the flavors blended. Comments (10)Garlic and shallots can still be planted. You plant them in the fall and depending on your location and the variety they will be ready for harvest sometime between late June and mid August. Sometimes they sprout in the fall before the ground freezes and sometimes they don't but they will grow fine regardless. Bulb onions are completely different. What variety you plant and when depends on your location. In New England you will need a long day onion. Lots of information on growing these a search here and on the Allium Forum will pull up but in short, if you are starting from seed you will need to start them indoors in January or February and then transplant them outdoors maybe sometime around mid April. They will be ready for harvest in mid summer. If you want to deal with seeds and decide to plant sets or store bought transplants then you will still plant them in the spring. If you plant them at the wrong time onions will only make scallions and will not bulb up (same goes for garlic and shallots too). "I have more of these (grocery store) red onions that went soft and are sprouting. Compost or plant them?" You can plant them if you want but don't expect them to form a bulb. They will make scallions and will flower. Onions are biennial and flower in their second year or growing season. Rodney P.S.
