Weird pie experience

I found a good recipe for a sweet cherry pie and adapted it a bit. I used less sugar, and used unrefined, and added some dried sour cherries macerated in grand marnier, omitting vanilla. There was also lemon juice and cornstarch in the filling, and a pinch of salt. Oh and a few dots of butter.

The macerated sour cherries were yummy. The cherry that was covered with filling mix but fell out of the pie when I was putting on the top crust was delicious. The warm goo on the baking sheet that bubbled out while the pie was baking was heavenly scrumptious. The pie was served at a little above room temperature (hadn't quite cooled to the hand on the dish, but didn't taste warm). It was okay, but more "interesting" than scrumptious. The next day, chilled, it was delicious.

Any speculation as to why?
