Comments (6)That is a tough call. We all have doubts about decisions and once the decision button is hit... more doubts. First and foremost, you have chosen a lovely stove top. My cast iron griddle is almost 90% out and on two burners or the center big single. I've gone back to basics the past few years...chop by hand, toast, and no longer use countertop appliances. It is my therapy to cook with good ingredients and fresh. I do often have 4 burners going because i multi-task and enjoy prepping for the week and making stocks and sauces. Panini i just put a heavy enameled pot on top. It does become intuitive for any love of cooking. French top? Not sure. I actually think i have one in my summer home. Maybe? It is a wood fired stove with a solid thick iron top and i slide pots over and away and such a fun way to cook. Adjusts with this and that to give air flow over different parts of the top. I do like the slide around of the heat. On a flat surface. Under your possible french top would be a single burner? Still has a slide ability to reduce a strong simmer to a very low heat. But you could do that on a grate top, 6 burner with a griddle. Not all restaurant trained chefs actually know how to cook BTW. Judging by many mediocre meals i have had out in NYC. No love and a bit like robots. An old friend of mine was on Iron Chef and won but that is an exception. Comments (12)Ditto everything cookncarpenter said. I have a Wolf 36" with four burners and a griddle. I went through the same turmoil trying to decide if I would really use the griddle. I was talked into it by the Wolf showroom and our appliance store manager. It is a HOME RUN!!! We use it everyday and LOVE it. Makes the best eggs, bacon, omelets and most any breakfast food. But, we also cook most dinners on it like shrimp, fish, steaks,pork chops, stir fry veggies (turn out so awesome), lots of veggies on it . I rarely use the burners. Clean up is so easy and quick saving so much after dinner dishes, pots and pans to wash. As soon as the last thing comes off the griddle I turn it off, pour cold water on it and throw paper towels on top and do a quick scrub with a metal spatula pressing down on the paper towels. Then lift the paper towels to the trash with the spatula. All done and by the time we finish eating eat it is cool enough to apply a light coat of oil for seasoning and then it is covered with the metal cover that comes with it - until the next meal. On the rare occasion it it is a meal that sticks to the griddle I have used crushed ice water and that seems to take it all up. For us and our empty next - it is the perfect size. I have narrowed it down to the Miele with built in griddle (mostly because it matches the Miele Steam Oven and Miele microwave) or the Dacor all burner with removable griddle. Comments (13)I love the smaller 18” oven. There is just the two of us but tonight we are having meatloaf and baked potatoes and I will put it all in the smaller oven. I bake bread at least twice weekly and a lot of the times I will put it in the Dutch oven and it fits perfectly in the 18” oven. The 30” is for cookie sheets, large Turkey or on holidays a prime rib or beef Wellington something large that needs good air circulation. I also have a warming drawer so have never needed another oven. One other thing I found the griddle good for is an additional burner. We were having a large dinner party (before Covid) all four burners were in use and I needed to keep a sauce warm. I turned the griddle to 400 degrees and put the pan with the sauce in it on the griddle. Worked great....See MoreRuss Barnard
