Good choice on the marinated salad....but I think you really should add some real celery. It will need the added crunch!!

The tomatoes sound good too, it's just too bad that it's not fresh tomato season. It would be even more amazing with fresh tomatoes. Ah well, it'll have lots of flavor anyway and I'm sure everyone will love it.

Linda, how did you enjoy the experience? We opened to rave reviews/thunderous applause from what people have said about it :). As for the crunchiness, there are onions going into it, and I think people will eat it on bread, too.

Annie, I wish I had fresh tomatoes to put in it, as well. I have a bag of frozen sliced mushrooms I'm just going to thaw and rinse since the recipe calls for mushrooms, too. Maybe one of these times, I could put in mozzarella or feta cheese.

I'll be getting the ingredients today and whipping it up this evening at some point. They're calling for some wicked weather tomorrow (even possibility of tornadoes-which are rare in my part of the state), but hopefully it won't be as bad as they're saying. It would be ironic if we were putting on The Wizard Of Oz lol.

Defrosted frozen mushrooms will have a completely different texture to fresh mushrooms and I don't think they will be pleasant to eat as is,. Fine for cooking, but not in a salad.

Colleen, I'll see how much fresh ones cost when we go to the store later today. I'm also going to add some red or orange Bell pepper to the salad for some added crunch instead of the celery.

Linda, I bought a three pack of bell peppers for $1.88 or so at Wal-Mart. They were extremely fresh, just based on the smell when I sliced them (quite pleasant to my nose). The mushrooms were already sliced and were $0.98 per pack. I diced them a little, then I got lazy and just threw them in. We had the mini onions (not pearls, but roasting onions I think they are called).

Looks fabulous!!! Green and red peppers were $2.48 at Wal Mart yesterday!

Wow, Linda! They're only $1-something at our Wal-Mart. The ones I used had three in a pack: one yellow, one red, and one orange bell pepper. They were on the small/medium side, but still very useful!

I just stirred both bowls and sampled a little out of the onion/olive/pepper/mushroom bowl and boy does it taste good! It tastes like the Italian dressing/oil they use at a local pizza shop on their hoagies.
