Need help - island edging with waterfall countertop

First post here! We are still in design phase for our kitchen update. I'm trying to understand how countertop edge options are available for islands with waterfall sides.

Our kitchen island will be rectangular; sized about 9.5' by 4'. We really want waterfall sides on the short sides of the island (4' sides). (And we are looking at quartz for the countertop material.)

From what I have been reading about countertops edges though, I'm thinking we need to have rounded edges to reduce potential for chipping (demi bullnose is our preference) . But, to get the waterfall edge, it seems like we need mitered edges to make that happen.

My question is, can we have the mitered edges for the waterfall short sides but still have a demi bullnose on the long 9.5' sides? I have seen only mitered edge styles for the entire island on all pictures I have looked at with waterfall sides. I realize we may not like the resulting loo, but, is this even possible? Thanks!
