Need wood veneer countertop advice

My cabinet builder has convinced me to use veneered plywood as the countertop in my wet bar. Mostly for aesthetic reasons but also because it saves me money on stone counters and fabrication. I can't complain about the way it looks.

However, I'm worried about durability. This isn't something I want to redo any time soon. (If ever!) He said he will finish the counter in a way that will protect it. I don't recall what finish he said he was going to use but I'd like to get some suggestions from you guys.

The counter will be subject to light spills/moisture from mixing drinks and such. And it will only happen a few times a year when I'm having a party. Nothing out of the ordinary for a residential bar.

First question is, do you think veneered plywood is a terrible idea?

Second question is what is the best way to treat the veneer for long-term durability and protection from moisture and dings from dropped bottle openers, corkscrews, etc?

If it makes a difference the veneer is wenge.
