I was wandering through the grocery store and found a 4# tenderloin marked down to $6.57 because it was on the day to be pulled. Took that baby home, sliced off the silverskin, laid out thick slab bacon on the bottom of a casserole dish, put the pork on it, smothered it with fresh sage leaves, gobs of parsley, lots of pepper, salt, and a drizzle of Dijon, then wrapped the rest of the 2# of bacon around it. Baking it at 350F for less than an hour registered 145F internal so we had early lunch. I love pork but this combo was totally over the top for me. I'm going to take the grease from the bottom of the casserole and use it to slather over oven baked potatoes tomorrow. DH said to cut up some slices very fine and put on NC East vinegar BBQ sauce on it to make chopped pork sandwiches tomorrow. Now, since it is just the 2 of us, what do I do with the rest of the 2 1/2 pounds of cooked pork with bacon?
