First time cooking ribs.

Confession: I have never cooked ribs before, and don't order them in restaurants because they seem to be very fatty.

However I decided to try after I watched an episode of Guy Fieri's show where he visited a barbecue restaurant, and the chef gave directions for cooking ribs, using hard cider for the liquid, and I added a little liquid smoke. I bought a meaty slab of ribs and let them sit a day in the refrigerator with a rub. They said to cover and bake at 350 for 1 hour and 250 for 1 hour, which I did. The results were okay, but seemed sort of tough.

So, my questions: Does the cooking time/temp seem right? My instinct is that if I'd cooked them longer at the 250 temperature, they would have been more tender.

Also, are they supposed to be a little tough, or should the meat be tender, and fall off the bone like pulled pork?
