Marble or Ceramic Framed Area Behind Stove & Sealer

I am considering putting a marble herringbone area behind my stove and ceramic subway tile everywhere else.

I want to apply a sealer prior to installation and after. The Tile Shop has a marble sealer, but I'm not sure what is best to use.

Any recommendations? I do not want to change the color of the marble.

Will the marble still etch from splatters? I think it may be a deal breaker for me if it's going to have etches and be amplified by my range hood lighting on the vertical surface.

If that's the case, perhaps I'll just do subway tile in herringbone just behind the stove. The only problem with that is I can't find ceramic tile to edge the picture frame area that will match the cheaper subway tile from Lowe's. Any suggestions for this would be appreciated.
