Marble discoloring behind range

I'm thinking of using a slide in range with no back piece. I understand there might be an issue of light grout being hard to clean there, but what about the marble itself? Even if sealed wouldn't the heat, and grease yellow a white marble? So many kitchens here have marble behind the range, but I have to wonder how many are more show kitchens than working kitchens. Does marble discolor in back of the range over time? Is a standard range with a back a better choice if using marble? I will have an over the range microwave with no outside venting. Thanks.
