Nothing. My DH and eldest son are doing their Wilderness First Aid and it's for the entire weekend. Our other son already has his certificate so I might see him.

eli, it's a Paul Deen recipe and I've made it several times, which everyone seems to enjoy so here you go!

People have their preferences and recipes for jambalaya and this one suits me!

I even made shrimp stock instead of using water, this time from the shrimp shells! Plus I have all the liquid ingredients and seasonings put together, so all I have to do on Sunday is put them together in the Dutch oven to cook.

Smoked Sausage Jambalaya

Serves: 6

Cook Time: 30
Minutes

Ingredients

• 1/2 pound Smithfield Smoked Sausage, cut into 1/4-inch
  slices
• 2 1/2 cups water
• 1 (14-ounce) can diced tomatoes
• 1 (8-ounce) can tomato sauce
• 1 bay leaf
• 3 tablespoons dried minced onion
• 1 teaspoon dried thyme leaves
• 1 teaspoon garlic powder
• 1 tablespoon dried parsley flakes
• 1 teaspoon cayenne pepper
• 3 beef bouillon cubes, crumbled
• 1 teaspoon salt
• 1 cup long-grain rice
• 1/2 to 3/4 pound medium, fresh shrimp, peeled and deveined.

Steps

In a Dutch oven add water, tomatoes, tomato sauce. Add dry ingredients,
smoked sausage and rice. Bring mixture to a boil over medium-high heat. Cover,
reduce heat and let simmer for 20 minutes. Add shrimp and cook for an additional
5 minutes, or until shrimp are pink. You do not want to overcook the shrimp.
A tip from Paula: Never cook the shrimp before you add it to the jambalaya.
You want all of the wonderful shrimp flavors to cook into your jambalaya and
cooking it before would make the shrimp overcooked (rubbery). Shrimp cooks so
quickly, it is best to add it at the last few minutes.

My mother always requests subs, made with homemade bread, for Mother's Day. I'm baking most of the bread tonight, to give myself a break in the morning.

Also having:

Relish tray and dip

Potato casserole

Bean salad

Fruit salad

Bakery cake (not my favorite, but my mother's request)

Cream puffs, filled with Ermine buttercream

Chocolate chip cookies (I made my grandson one of those giant cookies :)

Son is cooking the main dish and had not decided what to make when he called. He will either cook it at home and bring it here or cook it all here. I offered to bake the dessert, and I think I will make The Next Best Thing to Robert Redford. It has been years since I made this. I even lost my original recipe. But it is yummy and I googled it. Son and DIL usually surprise us with a special cocktail too.

Reporting back that Mother's Day dinner was a success. We had 18 total, plenty of food, and a lovely day (a few raindrops in the late afternoon). And my children did the dishes!

satine, the best recipe I've found is at this link (The Battle of the Buttercreams) on the Tough Cookie Baking Blog. Her instructions are to mix the sugar with the flour and the milk before cooking, and then drop the cooled mixture into the beaten butter, a spoonful at a time. You can't go wrong--no lumps, no sugary graininess, just smooth-as-silk heaven. :)

Mama Goose, I fixed everything except the birthday cake, baked beans, ham. strawberry pie and we also had a fruit pizza. We carried all of the food I fixed to Amber and Mike's for our meal. There were ten of us It was a nice Mother's Day.

We had heinz 57/honey basted chicken, "dirty rice", green beans with Montreal seasoning sprinkled on it, and lemon cake. Just six or so of us. Shoulda been more, but my oldest brother didn't make it or bring his crew.
