Sweet Potato Tater Tots

So grainlady mentioned that she made them and now I am intrigued. I love sweet potatoes - rightly so since NC grows 40% of the nation's supply, the number one producer, and it is a native vegetable here having been grown by indigenous Native Americans long before anyone else hit the shores and probably eaten by dinosaurs before that! Not kidding, check it out on Wikipedia.

So to make them I might try a spaetzle press or grater with partially cooked potato dough mixed with flour for structure to make something more like shoestring sweet potatoes. Fried in peanut oil since that is another big crop here. Or, perhaps canola or what?
