I completely agree with raehelen and trebruchet. That fabricated stone price is really good, and if you wait for another piece it 1) may not be quite as pretty or 2) may be much more expensive. It the scheme of things, it will look fine and once you put everything together, you'll be surprised it probably wont even bother you. As an alternative, you could do a soap dispenser in one hole and a hole cover on the other, but I think the escutcheon plate would look more delibrate and planned so I'd do that. As far as the faucet - I just got two Delta Cassidy for my master bath build and installed them this week. (I got the 1997LF version which is just like that one but a few inches taller and is called a bar/prep faucet. Needed a little more height since I have semi-recesesed sinks) and they really are GORGEOUS looking in person, especially at the price. Every remodel is a bit of give and take -- For example, I wanted undermount sinks, but due to drawer configuration in the sink bases, it was near to impossible, and "settled" with Decolav Semi-Recessed. Looking at them now, I wonder why I was so doubtful since they look spectacular. Sometimes having to shift the vision makes it even better :) Don't sweat the small stuff, get the granite piece you love, at the price that's too good to pass up, and pair with the great faucet (Even with the escutcheon plate). It will look great.

I think you have gotten some good suggestions, and if you will actually use the lotion and soap in the dispensers that is a fine solution. (although if this is for a guest bath or powder, will guests know which is soap if you go that route?) I just worry that you like the single hole faucet because you like that uncluttered look and adding extra things in will make it look just as cluttered as two handles would and you won't be happy with the outcome. If that is the case, white plug covers to match the sink would look best, imho. Or ppbenn's suggestion as a nice compromise. You can take all this with a grain of salt, as personally I am a fan of the widespreads, and I would probably get the widespread to fit the 3-hole. ;-)

Top mount sinks, which used to be the norm, came with predrilled holes for the faucet and were usually placed into laminate counters. 3 holes was standard. When single hole faucet became more popular the eustacean also covered up the extra holes. I think it has always been to simply cover the holes in a top mount and prevent water from getting down in the hole the faucet sits in. Before granite or quartz became popular almost every one had laminate, and if water got in hole in the counter it would cause the particle board or whatever the underside of laminate is made of, to swell and warp and eventually degrade. Since many faucet manufacturers want everyone to be able to use their faucets, from laminate to granite devotees, they make them with the eustacean as an optional element for when it is needed to cover extra holes in a top mount sink and/or for use with laminte counters. Don't worry, it'll work out. And the chances of the holes being in the right place later on is probably close to 100%. I've installed expensive faucets and cheap ones and the 1 thing they have in common is that the holes line up. Otherwise, why would they make sinks that come with the holes already in them?
