Knifophia: how to plant already-sprouted bare roots?

I received some mail-order knifophia 'green jade' today. The instructions say to bury the bulb 2-3". However, the top growth has already sprouted and has green shoots 1-3" long. If I plant as instructed, the new green growth will be buried. Is it OK to bury the new growth? I'm in zone 6 and instructions say to protect with mulch in winter, so I want to avoid planting them to shallow.
