Hi Glenda and all, We had our Easter dinner today at Harry's sister's home. It was nice enough it have it outside so it was enjoyable. Wish you could have seen the food tables! When we got back to our room, I wrote down everything we had that I could remember. It looks like Marilyn_Sue's menu! Glenda, your pineapple casserole was a big hit. None of them had tasted it before and there was very little left. Ham Fried chicken Macaroni and cheese Squash casserole Potato salad (with onlon) Potato salad (w/o onion) Ditalini salad Green bean casserole Scalloped pineapple casserole Buffalo chicken dip with scoops Lettuce salad Deviled eggs 2 large relish trays Rolls Sweet tea Unsweetened tea Desserts: Peach cobbler 2 pecan pies Brownies 4-Day butter cake with coconut frosting (delicious) Marshmallow Whip cheesecake (Another cake???)

The recipe as I originally received it can be found at the following post: http://ths.gardenweb.com/forums/load/cooking/msg1109360423653.html The recipe as I made it yesterday is: Fiery Sweet Potatoes 6 medium sweet potatoes (peeled and cubed) 3 large carrots (peeled and sliced) 1 15oz can of Coconut milk 1/2 teaspoon of Red Thai Curry Paste (see note) 1 Tbsp olive oil 2 Tbsp Butter 1 Tbsp Brown Sugar Boil sweet potatoes until tender and mashable. At the same time heat oil in pan, and cook carrots, in oil stirring frequently, until carrots are browned and soften. Place sweet potatoes, drain them, add curry paste and coconut milk, and mash lightly. Place in glass baking dish. Top with carrots, brown sugar, and butter. (You can set it aside and refrigerate it at this point) Bake until hot. (375 deg F 20 minutes) Note: The original recipe calls for 1 TBsp of curry paste. It must be a different brand of curry paste. With the brand I use that much would render the dish too hot to eat.

Grandson's birthday party was held in the afternoon. Went back to their house for gift unwrapping and finally left at 7:30. Stopped at a diner and had chicken noodle soup, chicken fried steak, baked potato, mixed steamed veggies and french bread and butter with iced tea. Burp.
