Can't find a replacement fridge that fits in existing space.

We need to replace a KitchenAid side-by-side refrigerator that was installed as part of a custom kitchen back in 2000. I am having a difficult time finding any new refrigerators that will fit in the existing space, which has custom cabinets all around it. We ordered a Samsung fridge (listed at 35.75” wide) and had it delivered to the house, and it really wasn’t close to fitting. It seems almost every new “36 inch” fridge has width between 35.63” and 36”. I’ve found a couple of 35.5” legacy offerings from Kenmore, but that’s about it. I’m worried that if I wait much longer there will be zero options.
Widening the opening for our fridge would require a major tear-up to our cabinetry, as the wood goes from floor to ceiling on both sides. It’s certainly not something I would consider doing myself, and I’m guessing a carpenter would charge much more than the price of a new fridge.
Has anyone else run into a problem like this before? Do you have any suggestions?
