bath exhaust fan / venting out soffit or roof?

I'd greatly appreciate anyone's advice on how to approach this problem (and if its more appropriate to post this somewhere else on the forums). We have cathedral ceilings in the bathroom and have a bath fan which is exhausting through the soffit (40+ year old house). Current codes probably won't allow us to remodel and continue to vent out the soffit. Additionally, we're having mold issues in the ceiling (not clear if its surface from inside or from the roof side) -- but it seems likely that exhaust is traveling back up the neighboring soffits into the ceiling space. (If you stand outside and look at the soffit, there is absolutely NO visual indication that fans are exhausting out the soffit -- the tubing just abuts the soffit screen -- no round vent with cover or anything, just soffit). There is no attic, its cathedral ceiling. If we install new fan and ducting to go straight through the roof -- there is probably going to be about 2" between the fan itself and the roof at most, so moist air could possibly just condense in the exhaust tube and drip back down. We are also in a snowy cold area, so have to vent through roof in such a way as to deal with potentially several feet of snow. Contractors seem wary of venting out the roof in case it creates a leak. I suppose its possible to drop a square area of the ceiling to mount the bath fan in (and thus provide a few more inches between the fan and roof) but it would look pretty weird. Thank you.
