Stretched Succulents

Hey everyone! I have a few echeverias (I think) that stretched a ton during the winter due to the lack of good sunlight. I'm planning on cutting off the top portions and trying to root them because the rosettes are tightening up again and look nice, but does anyone have any recommendations on what to do with the rest of the stretched area?

One of them is growing little babies towards the base of the stem so I was thinking of cutting off everything so they'd have more room to grow but that leaves a whole middle section I feel like I shouldn't just get rid of.

I've only had succulents for about a year so this is my first time trying something like this and I appreciate any advice I can get!
