Help with a complicated recipe

I had these wings on St Thomas and we
have tried to recreate them using shortcuts. Not even close. So I am willing to try harder. What do you think of this? Feel free to suggest
changes. I'm not getting things right, so help! :)

wings (The menu lists it as this, verbatim: Carib Chicken Wings Sambal
Marinated Chicken Wings / Caribbean spice rub / dressed in Thai chili - bbq /
jalapeño ranch / breaded or naked

Sambal marinade

12 chicken wings, chopped at the joint, tips removed

1 lime, zested and juiced

1 lemon, zested and juiced

2 tbsp of chili garlic sauce (sambal olek)

4 cloves of garlic, minced

1 tsp olive oil

pinch of salt

pinch of cracked black pepper

put in fridge overnight.


Spice Rub

1 t garlic powder

1 t dried thyme

1 t allspice

1 t nutmeg

1⁄2 t salt

1⁄2 t mace

1⁄2 t clove

Rinse the chicken wings and toss them in a mixture of flour,
corn starch and the spice rub. Deep fry them. How long?

Thai Chili BBQ

10 cloves garlic, minced

1 T black peppercorns

1 T coriander

1 stalk lemongrass, trimmed and cut into small segments

2 red or green Thai chiles

2 T fish sauce

2 T yellow curry powder

1/2 can coconut milk

2 T brown sugar

Toss the chicken in the chili BBQ sauce.
