Question about roaster ovens.........

I really need more than just my one oven at holiday time. I've looked all of them over, and the only ones I'm really interested in are the ones with the stainless steel cookwell. I sure wish some of them were made in the U.S. But my question is........why is it so important to heat them up outside for an hour or more to get rid of the noxious gases? I mean, what ARE are those noxious gases? Is there any other type of cooking appliance that really requires this? It's a bit disconcerting. Any ideas? Thanks.
