Question about roaster ovens.........

I really need more than just my one oven at holiday time. I've looked all of them over, and the only ones I'm really interested in are the ones with the stainless steel cookwell. I sure wish some of them were made in the U.S. But my question is........why is it so important to heat them up outside for an hour or more to get rid of the noxious gases? I mean, what ARE are those noxious gases? Is there any other type of cooking appliance that really requires this? It's a bit disconcerting. Any ideas? Thanks.

Yes...or sorta' yes. Not just roaster ovens but new stationary ovens...in the wall and range ovens...require a 'burn-in' before being used for cooking. Because of residual manufacturing oils, protective coatings & various bonding glues/ products on the parts of the appliance.

If you want a US made product and a product that you don't have to break-in, buy a vintage Nesco, Westinghouse....roaster oven. You'll find them at estate sales, garage sales, and the like for very little $$...usually $10 or less. In varying condition from well-used to almost new condition. All of the vintage ovens that I have owned had/ have porcelain cookwells. If there were any vintage stainless steel ones made, they are rare birds.

I have a Nesco 18qt roaster with porcelain cookwell. Love it and as stated above about the burn in, same as new ranges.

I live in Wisconsin where the Nesco is a tradition. I believe it is made here or at least it was, who knows anymore, but it is a great device and I use it all the time. Just realize that it is not all things for everyone and you will be happy with your purchase. I first saw the Nesco in use at a friends house where Mom would cook with it a lot particularly game. So it has a lot of nostalgia for me. I make their chili recipe for the 6 qt a lot adapted a bit to my own tastes and people seem to enjoy it. It's great when it's too hot to use the oven. I own several 6 qt models and a 18 qt size which I use to cook for large family gatherings and for turkey. You'll want to experiment with it before you use it for an important family gathering or you may be disappointed. There is a technique for getting a turkey to brown correctly and if you don't do it right the turkey won't brown and may have a steamed taste. Still good but maybe not what you were looking for. On sale I have seen the 6 qt size selling for $25, buy one and support American industry and get a bargain to boot!

Thank you for the additional suggestions. I am also looking at the Le Creuset Enameled Cast-Iron Rectangular Baking Dish. I don't own any LC cook/bakeware but have read so many raves about it here. This one can go from freezer to oven and even handle stovetop cooking for making gravy. It is a very heavy dish (even without food) and $$$, but would serve dual roles as lasagna pan and roaster. I have 2 Amazon.com gift cards (and possibly one more on the way for Christmas!) so that would help quite a bit. I haven't been able to determine if it can take high heat in the oven (500F).... does anyone know? Can anyone comment on this dish and if the extra price is worth it?

Annie said it well. Most any store-bought ham has water added anyway so there's lots of liquid in there. Even those marked "natural juices" are still water-injected. Beer is another good liquid for braising if you so choose to add, but if you're heating a ham rather than roasting it, you shouldn't have any problem. If it seems to be losing all the liquid in there, add a little moisture to steam and seal it up better.

What great ideas for using my electric roaster-which I haven't even used yet!!! Yes the liners are great. The only place I have been able to find them is at a resturant supply store and you have to buy a case. Our church buys a case and then sells them to whoever-$1.10 each for the 18# roasters.Works good for me. Again I want to thank all you good people for your help. Now, I have a question-why do I have to type in my password and user name every time I want to post a follow-up here? Yes, I check the box to keep it on the computer.

My new double ovens also required that "burn off" step, as did both of my Nesco roasters, which I absolutely love, incidentally. As was mentioned above, there are protective coatings and various products used in manufacture/shipping that are mostly easily removed by heating.

Thanks everyone. Oops........I've had several new ranges over the years and never pre-heated them. (Or maybe I did, now that my memory is so bad!). I'm feeling better about getting the roaster oven now. Thanks!

IT's a good idea to wash before the bakeoff. Mine took nearly a whole day to bake off. If I could still smell it, I kept baking.

I bought mine used for $20 but it looked like brand new. It is probably as old as me.....has a cloth covered cord, but I use it a lot and it works perfect. If there was anything to burn off, it was probably burnt off many years ago.
