Peppermint Candy Question

Bluebell66

I have an old recipe from my grandmother that is called Peppermint Bark, however, there is no chocolate in it and it's not the layered stuff we all think of as peppermint bark. It is absolutely delicious and melts in your mouth when done properly. The problem is it rarely works because it turns out grainy. My mother gave up making it many years ago, and I have gotten in right a few times in 20 years. The biggest problem is that the sugar is grainy. Can any candy makers look at my recipe and give me some pointers for greater success? Or give me a candy comparison that I can look into? (It's not fudge, so what could it be considered?). Many thanks!

2 cups sugar

2/3 cup whole milk

1 tablespoon light corn syrup

1/4 teaspoon salt

2 tablespoons butter

1 teaspoon vanilla

1/2 cup crushed candy canes

Combine sugar, milk, syrup and salt over low heat. Stir until sugar is dissolved. Increase heat and cook to 234 or soft ball stage. Remove from heat and add butter. Cool slightly. Add vanilla and beat until creamy. Quickly stir in candy. Spread 1/2" thick on buttered sheet.
