I know it seems uninspired but I think subway tile in white or pale gray would be good. There is plenty to look at with the granite.

In my opinion, you should be most concerned with matching the countertop since they will be directly touching. However, the tile definitely needs to coordinate with and compliment the cabinetry, as well as the overall space. I do like the suggestion of Carrara marble tiles. Another option could be New Calacatta marble tile, which will have some slightly gold veins (which appears like they will go with the upper cabinets).

Handmade, crackle subway tile will add shine and texture. Look at Sonoma tilemakers, Quemere, Fireclay, and Pratt and Larsen for beautifully made tiles. I'd use any shade of gray, from light to medium to dark, depending on how much contrast you like. The coloration of these tiles is also variegated so you get a depth of color. They'll be more expensive than the mundane subway tiles at the big box stores, but you don't need very much, and compared to the cost of the cabinets, countertops, and appliances, it's not a huge investment. I would suggest a pure white subway tile that matches with the white upper cabinets to brighten up the space.
