Delete builder grade mirrors and knee space in master bath?

Our new master bath configuration has His and Her vanities on opposite walls. The 'Her' vanity is about 6' long, with a 24" knee space in the center.

Two questions:

1. I'm contemplating having the builder remove the typical frameless mirror, so I can put in framed mirrors. But I'm not sure how feasible/expensive it would be to find a mirror that size (close to 6 feet long). The builder does not give credit for deleting mirrors. Would a framed mirror lose out on 'coverage'? If you had the choice, would you leave out builder grade mirrors?

2. I've never really used a knee space, and am leaning towards putting in cabinets instead. Adding cabinets would be extra $$. Is the knee space really that much of a value-add?
