Comments (15)IF you have room in your shop/garage for a dedicated bench grinder, consider getting a paper wheel system. They do take up a fair amount of space, but can put a razor edge on the dullest knife in just a few minutes. I really like mine. The web site at the link reviews all the various machines and stones, and sells paper wheels. He likes the Chef Choice, but with the caution that it can scratch the sides of the knife--okay for general use but not for collectible knives. Comments (43)Just to back up akcchicago, US Davis also published a number of studies evaluating the cleanliness of plastic versus wood boards. The bottom line was that a used plastic board could never be fully cleansed of bacteria by hand. It had to go in a dishwasher with a sanitization cycle to kill off the bacteria. Wood would suck the bacteria in to the board and kill them. Here's a link if anyone is interested. FWIW I still use plastic sometimes, but it has to go through the dishwasher. Comments (8)Cooks Illustrated recommends the Victorinox Swiss Army 6-piece Rosewood Steak Set, Spear Point, Straight Edge. It sells for around $170, (occasionally as little as $150), and so is a little over budget if you want 12 knives for $300, but not by much. Their second place recommendation is their Best Buy, Chicago Cutlery Walnut Tradition 4-Piece Steak Knife Set that sells for around $20.
