Turkey jerky?

I have my dehydrator going now with some beef jerky. It got me thinking bout trying somthing a little different. I have seen turkey jerkey in some stores but really have never tried any. I see recipes on Pinterest but no comments really about how good it was. Has anyone made any? I have a turkey breast in my freezer I got on sale I might try it with.

My husband makes turkey jerky all the time. We use the ground turkey available in supermarkets. The one with the higher fat content. He uses a commercial seasoning packet he buys online. Others we know make their own blend. He mixes a packet per pound (or 20oz. pack). We then put it into a cookie press and use the tip that makes a strip about an inch wide. He does it directly on the grate. Cuts it about 4in as comes.out of press. The cookie press is about. $20. Half the price of the one offered in accessories book for dehydrator. Get the 20 off coupon from BedBathand even better price. Everyone really likes this jerky, GK can inhale 2lb very quickly.

As for you turkey breast, it might be on the lean side. Would have to grind it or slice.it VERY thin. And marinate it. We have always used ground meat. Takes about 6 hours.

My DD had to get some for her son's school field trip. The stuff from the store tastes like bacon. It's strips, not ground.

"What is the consistency of these? Crisp or hard and chewy like beef jerky?" As with almost all microwave cooking, requires trial & error with your own unit . . too long and they do turn dark and crispy. The challenge is finding the right cook duration for a specific quantity for the desired consistency. Mine is 2:44 for 11 slices. The type of cookware used also makes a difference. Paper plates are a personal preference because they don't get too hot. Something like a microwave omelet maker also works well, but does trap condensation water inside.

Thanks to the info given out regarding sending boxes to APO addresses to a soldier or sailor. It's all right on the money. I was advised to go to my local post office and get the customs form, label and the largest APO prepaid box to use for my son's things. The box costs just $12.50 for me to send, and it's one of those "whatever you can get in there; it all ships for the same price" boxes. They have specific boxes in 3 sizes to send to military personal overseas, so ask for those special boxes. There are pre-printed labels on each box to fill out for the soldier's name, rank and address numbers (they're all numbers). Thanks to all your very, very helpful suggestions, I came back home with enough to fill 2 of these boxes (LOL!)! So, I'm sending off one tomorrow and the other next week. BTW, the post mistress at our post office informed me that parents have been telling her the Army is removing all beef jerky before sending the boxes onto our service men and women. She has no idea why, as they're not the restricted pork products, but advised me not to waste my money sending any. Rose: thank you for thinking of me. I'm holding up well enough, although I shed a few tears in the middle of Target this afternoon, when a soldier in uniform stopped to help me pick out some items for my son. Sometimes, the reality of it all shakes me to my core, but then I pull myself together and get on with it. Again, many thank for all your great suggestions. Oh dear. My first instinct was to tell you to use a probe thermometer. I always put it paralell to the breast bone in the thickest part of the breast and set it to go off at 165. I always cut between the leg and breast to make sure the juices are clear just to be sure. However, since you nixed the probe idea, let's do plan b. "Fresh turkey" is not frozen,not thawed completely. I always get a fresh turkey, and run cold water in the cavity for a few minutes to help get the iciness.out and to clean it. I have never ever cooked a turkey for 5 hours..good grief turkey jerky. The longest i have cooked a turkey was 2 and a half hours, and it was a 25 pounder.For 15 pounds, I would cover it in butter (on top and under the skin-dont flinch im a cook not a doctor)and put it in at 500 for 30 minutes. The skin will get crispy and delicious if you do this first.Cover it in foil and lower the heat to 325 for 1 and 1/2 hours. (Sometimes i reverse the cooking,I do 325 for an hour and a half and then crank it up to 500 for the last 30 minutes. You dont have to cover it during cooking if you do it that way. The only downside is that if for some reason it's not cooked by the end of the 30 minutes, youll have to turn it back down and cook it longer,and it might overbrown)This should suffice. However, be sure to check it with a thermometer,or make sure the juices run clear.White meat should be done at 160 to 165 degrees. Take it out and keep it covered for about 30 minutes to rest and finish cooking.

I have a 1.5" thick cooking stone in my oven almost the size of a cookie pan in surface area. It retains/gives off enough heat to prevent any appreciable loss of heat when opening the door. Granted there is a lot of heat lost but the oven recovers quickly. I have a sensor in my oven that takes readings and stored them in my computer. I can plot the change in temperature. I also placed the sensor just under the skin and it changed scarcely 1d with the door open for 30 seconds. So much talk about the oven needing to be at 350d or so. What about Sous vide? What about making chicken soup? Neither of those styles ever get above 190, maybe 200 but that is rare. The bottom line is that chicken held at 148d for three minutes will kill 99.99% of salmonella. At 160d it only takes 14 seconds. Also, cooking at 325d will give you a temperature gradient from that 325d at the surface down to 165 in the deep part of the meat. That grossly over cooks the white meat. Slow and low gives much less of a temperature gradient (differential) and allows the dark and light meat cook more uniformly. As long as you measure in many locations and the readings are over 160 (many claim 140) you are quite safe.

A small town butcher shop had the best turkey jerky I've ever had. About 130 miles away so I don't get there often but try to pick up some things when I'm in the area. I don't like jerky made from ground meat. I think part might be I don't trust the bacterial issues inherent with ground meats. Don't see any reason for it other than making them look commercially made and I really don't want that anyway. Home made is supposed to be better, so I like to go for better when I can.

I'm Gona try to make some next weekend, I usually have the wife slice the meat up for me. We make a pretty good marinade for beef so I'll probley try that for the turkey and see how it turns out.
