Full StoryThis is the only fruitcake I have ever liked. My husband doesn't like it and I have nut allergies in the family now, so I haven't made it in years. I think I am going to go ahead and make it even if I am the only one who eats it. It is so pretty and so moist. I don't know if you can even find the mix anymore. A friend gave it to me in 1989.
Jeweled Fruitcake Bake at 350* for 89- 90 minutes
2 eggs
1/2 cup water
1 jar NoneSuch Rum &Brandy Mincemeat
2 pkgs Pillsbury Date Bread Mix OR 2 Nut Bread Mix plus 1/2 pkg chopped dates
2 cups (16oz) candied fruit mix
1 cup chopped nuts (I use pecans)
1/2 cup brandy or rum(I use rum)
Generously grease and flour a tube pan. In a large bowl, combine eggs and water. Stir in mincemeat, bread mix, nuts, and fruit. Spoon into pan. Bake until toothpick comes out clean. Cool slightly and remove from pan.Pour rum over top of cake. Wrap cake tightly in foil. Store at least one week before using.
