Moisture between the glass would not be caused by poor installation. Rather, it would be caused by a defective manufacturing issue or due to some type of unusual situation where the normal wear was affected. For instance, extreme variations in temperature due to orientation or something going on regarding the interior of your home. I design and specify windows for homes in Florida almost all of them on the water or close by. Sierra Pacific offers a 30 year warranty on its 2605 finish and 20 year warranty on its patented Coreguard wood treatment and I would consider those windows. Andersen performs well too but they reduce their 20 year warranty to 10 years when on the coast. In my 40 year career, I have had great success with Andersen and SP and would run away from Pella if you are looking for an aluminum clad wood window. Just my opinion based on more than a hundred installations.

Unless I jump over to finding someplace with better selection, maybe the Georgian is a better match. It isn't from the same period but it has some similar elements to the first-floor trim. Georgian and Italianate houses are at least both nodding at classical architecture, even though they are different creatures. The fluted Victorian isn't doing this, really. I'm curious about what you said about McMansions. I have spent very little time in suburbs so I have no idea what the new builds are putting in. Is putting rosettes in McMansions a thing? If so, I guess that would explain why its so easy to find the kits for fluted casing + rosette corners, unless there are just a lot of people with old homes looking for something fun. But this news confounds me because the only place I've seen fluted millwork is (1) in old Victorian houses I've been in (midwest) or seen in blogs, (2) in some of the floor-to-ceiling renovations of rowhouses in my neighborhood, where a building company has selected it. To be clear, they are not matching the old trim in those cases - they're removing all the old details and putting in their own.

Glass will break with the same ease whether it is in a UPVC or Steel frame, that is the weak point from a security standpoint. Obviously steel is much stronger than UPVC, however that rarely translates to any benefit in a residential window application unless you have some very specific circumstances.
