Lynn's Recipe for Cranberry-Orange Compote (Relish)

While we were gone on our trip (we just got back last night), Delilah66 had asked me for this recipe. I thought it would be better to start a quick new thread for it, so that she'd see it.

This is an easy, make-ahead dish that we love so much that it's now a staple for both our Thanksgiving and Christmas dinners. Later on, in the week after Thanksgiving, I'll serve any leftover compote with grilled pork tenderloin or chops. I also use it in my Cranberry-Orange Coffeecake that I make for every Thanksgiving Morning breakfast.

Cranberry-Orange Compote

Ingredients:

  • 6 cups fresh cranberries (2 bags of cranberries usually = 6 cups)
  • 9 TBS fresh-squeezed orange juice
  • zest from 1 1/2 oranges
  • 3 cups sugar
  • 3/4 tsp cinnamon
  • 1 1/2 tsp vanilla
  • orange peel curls for garnish, if desired

Directions:

  1. Combine all ingredients (except for orange peel curls, if using them) in a medium saucepan. Place over medium heat; cook 7 to 10 minutes, stirring occasionally, until berries start to pop but are still whole.
  2. Transfer to a bowl to cool. Serve at room temp or cold. This stores wonderfully in my refrigerator for up to a week, as long as I keep it covered.
