speaking of Thanksgiving.....

And we were....weren't we?
For about 27 years, I have made a certain salad for Thanksgiving. I originally made it as a heart healthy alternative to Waldorf salad because a relative was on a very low cholesterol diet, but we no longer have dinner with him. It's a take on traditional Waldorf salad, cut up apples and pears, celery and walnuts dressed with a raspberry vinaigrette, easy on the olive oil, heavy on the pureed raspberries. It's delicious,,,,but I am freekin sick of it!
For the past 10 years or so I have gone to my son's for Thanksgiving, and while he does most of the cooking, I do certainly help, and his wife insists on that salad every year!!!
What can I suggest that would be light and fresh and also have a long "table life"....that is wouldn't wilt quickly after it's dressed like a green salad will?
