Comments (3)After my trip to the farmers market Saturday, I came home and roasted some more red peppers to put up in the freezer, and I can never pass up more corn :) I also bought some Northern Spy apples, made an apple bread pudding and put up the rest for apple crisp or pie later. I bought several winter squashes and made butternut, corn, beans and wild rice for Sunday dinner. Today I made my Oop's bread, and since it was not humid today I figure it is more like a focaccia, which is fine with me. It is made with steel cut oats from the Amish country just east of here. Lots of fresh herbs at the market Sat., I dried them in the oven and have jars of basil, dill, parsley and sage.. My Rosemary plant is the only survivor of the "cat who climbs". Since I have run out of freezer room and don't have a canner, I think I will dehydrate some veggies and fruits this weekend. Comments (8)That is a great idea. All about the do-aheads for a crowd larger than 12. Having that weekend ahead of time to cook another bird, carve, makes a nice rich stock for the gravy, freeze both. Lay the carvings in a stainless baking dish like a lasagna pan so somewhat shallow, or a sheet pan/ cookie sheet with at least an inch high sides. Make a stock immediately with a couple onions, carrots, celery, bay leaves, etc. The tray of turkey slices needs to cool quickly, then fridge a bit. A 1/2cup of the stock, chilled, even interrupted while simmering, added to the slices with a few pats of butter...freeze that all ready for the oven. Parchment/ foil. You will have nice stock for your stuffing/dressing and even a do-ahead gravy. Even a quart or two of stock for a soup day or two after. (i freeze in 1/2 pints for easy thaw). My MIL has always roasted at least 4, sometimes 6 extra turkey legs with the bird. The boys like the legs. Pretty common as turkey legs are hard to come by near the holiday so she plans ahead and freezes what she can find. Adds them to the roasting bird around the side an hour into cooking. Lots of tricks for more than a dozen guests. I've done a few times for 25-30 and kinda like the challenge. We used the smoker for the extra turkey and a friend did a brisket on the grill...kept the boys occupied outside. The last big family holiday a few years ago with a three day stay flying in from everywhere, we had beds prepped, trays of snacks prepped, breakfasts prepped, the main meal prepped...even the table prepped...well ahead of the first car arrival. Comments (5)I'm sorry about your friend, Marilyn Sue. That is a lot of meatloaf you will be making. We have a small chest freezer that needs defrosting so we are not buying any meat until we eat what is in there. Plus, I don't want to leave a freezer full of food when we will be gone for a month in Dec/January. So, I'll be cooking something out of the freezer but not sure what just yet. Comments (35)Made my first batch of cooked eggnog on Sat so it could chill overnight. I dose it with rum and bourbon, and like to try different brands. A friend visited Cuba earlier last year (before travel was closed down again) and I told him to buy me a bottle or two of the most expensive Cuban rum he could find. I offered to give him money upfront - I was thinking $100 - but he said since we didn't know what he would be able to find, he'd just ask for reimbursement when he returned. So he comes back with a bottle of 7-yr old rum for me. Gives it to me and says, "$15, please". I'm dumbfounded. "Is that ALL? Really? $15?!? The last specialty rum I bought was $50!" "Oh - well, they did have one for $40," he admitted. I had to close my eyes, I was so pained. Hey, he meant well and schlepped it all the way back to the West Coast to bring to me. And the $15 bottle he did get is absolutely lovely, better than Mt. Gay which is twice the price. I had not opened it until now, and it was a great addition to the nog. The thing is, the rum distillery in Cuba was the original Bacardi Rum factory. When the Communists took over, they kicked Bacardi out but kept making the same rum. I figured this was my only chance to get a true old-style rum - and unfortunately, travel there is now banned again. Sigh. The 7-yr old rum is so good....I and my rum-drinking friend (who also swooned over a taste of it) agree we cannot even imagine what the $40 rum must be like!
