Weekend 'cooking'

Maybe it's the promise of fall in the air, but I really felt like stocking up on food this weekend.

No pictures, but I thought I'd share what I made.

Used up a big basket of tomatoes falling off my neighbors neglected vines. (His only interest appears to be in growing big plants -- he lets the fruit rot on the vine. MOre for me!) Had a caprese salad with mozzarella for lunch, then made a big pot of sauce with lots of peppers and mushrooms and garlic. Used the last of the Italian sausage and cooked little tiny meatballs, half-cooked some pasta and assembled 6 freezer containers of spaghetti and meatballs.

I also had some chorizo and kale that had to go, so I sauteed that, beat in a ton of eggs, and poured little fritattas in muffin cups and 3/4 baked those. Then popped 20 or so in the freezer for fast breakfasts to nuke and run.

Used the rest of the chorizo and kale in a crockpot soup, with barley and beef broth. No recipe to speak of, and not one of my finest creations -- but filling and pretty tasty. Got another few containers of that for the freezer.

I've been incorporating more "raw" food in my diet (we'll see how much of this I can afford to do in the winter!) so I mixed up some "mock chicken salad" with nuts and veggies. (That's my lunch today, wrapped in romaine leaves.)

And I finally made raw crackers I like, with sprouted wheat and rye, onions and caraway seed.

By myself now, but always put together a few meals that could be re-invented during the week.

Chicken and dumplings became a chicken pot pie
No Peek Casserole became beef stroganoff
Baked ham became ham and beans and cornbread (and sandwiches and omlettes and frittatas)

etc., etc.

Gemelli pasta with cannelli beans, spinach, bacon, red onion, mushroom brushetta, fontina and parmesean. Will be leftovers for a couple of dinners this week. That's a little light for me over a weekend, but I spent this one mostly canning. Weekends are "clean out the fridge and see what you can make" time for me. Usually it's soup in the crockpot.

The main reason IMO that people have stayed away from KA ranges is because they have Whirlpool ovens. A few years ago they would die if you use the self-clean feature. Maybe they have improved but no one wants to be the first or one of the first to on GW to buy these. Not great at providing even consistent heat either. The burners are standard wide ring sealed burners. Yes they have 20k btu power burners and a 5k btu simmer burner but not very even heat. With Wolf you get nothing special burners but a fantastic oven. If you are looking at entry level/less expensive pro style ranges why are you paying a premium for dual fuel? Why not save the money and get all-gas? Consumer reports rates a lot of crap well and good appliances poorly. For example they rate a Ninja blender with plastic gears/sockets that rarely last two years of hard use 1 point below Vitamix which has a long long established record for durability. They rate KA ranges high and Bluestar near the bottom. Some crap Chinese grill called Blue Ember #1 and Weber Summit near the bottom.

Working regularly on the Wolf open and sealed burner rangetops, I've encountered a variety of cleaning "situations". First, as ZMMN mentioned, the griddle is unbelievably easy to "clean". The key is not to strip the seasoning off. The seasoning, much like a cast iron skillet, is what makes the surface resilient to sticking and easy to cook on. Simply scrape with a dough cutter (a few bucks from L&T or rest. supply) and steam with a wet paper towel while the griddle is still hot. Maybe 2 times a year I'll strip it down some, but with the stainless cover or optional butcher block insert you really don't need to make it "shiney". Side note, the sealed is a little cleaner because the trip tray is top side and can be taken out to clean. On the other hand, the open burner griddle can get residue in the corners of the drip area. Next, the Wolf "open" is actually semi-sealed so you won't have much drop down (except with the griddle). I think that makes it easier to clean for food spills. Conversely, with the single burner cap on the sealed rangetop, I think this unit does better with liquid boil-overs. Either way, if you'll wipe off the residue and then rinse or quick wash it before cooking on it again you'll be in good shape.

I talked to Ashley and she puts the kids all over Facebook, so she doesn't have a problem with me posting pictures of the girls here, although I'm still a bit apprehensive about it. Anyway, I planned to bake bread, but Madi and Maci came to spend the night Wednesday night as their Mom was "on call" at the hospital and their Dad had mandatory SWAT training or some such thing. So, Madi wanted to bake a purple cake with pink frosting as a Valentine's present for her family. Pixistix' Hot Milk Cake became purple, and the buttercream frosting was definitely pink. I let her add the color, which may not have been my best idea ever, LOL. We used the little pans that my girls used to bake cakes when they were small, and it was funny to hear them "reminisce" about back when they were kids, since Amanda is 32 and Ashley is 25. There are so many very very simple things that will allow you to get a meal on the table 20 minutes after you get home. If you don't want to do the long slow cook thing....there are a million things you can do with a piced of meat and a fry pan and 10 minutes, from chicken breast, to thighs, tpo fish filet to minute steak, hamburger....eggs etc. do you know anyone who would walk you through a few meals....like a sautéed chicken breast a potato baked in the micro and some mixed greens sprinkled with balsamic and a little olive oil? Things like hamburger browned in a pan, a can of pinto beans drained and a can of rotel....add some tortilla chips A bag of shredded lettuce, some browned hamburger a can of rotel and shredded cheese on a tortilla. Times when I have been super busy and had a husband and kids to feed, we lived on steaks, chops, fish filets and hot dogs. And if you really don't want to cook there are lost of frozen ready to eat foods that are lots better than a TV dinner. Check out Trader Jo's I know one woman who doesn't cook and she lives on fruit, yogurt, frozen cooked and shelled shrimp, rice cakes, bagged greens and bottled salad dressing and good artesan bread.

After my trip to the farmers market Saturday, I came home and roasted some more red peppers to put up in the freezer, and I can never pass up more corn :) I also bought some Northern Spy apples, made an apple bread pudding and put up the rest for apple crisp or pie later. I bought several winter squashes and made butternut, corn, beans and wild rice for Sunday dinner. Today I made my Oop's bread, and since it was not humid today I figure it is more like a focaccia, which is fine with me. It is made with steel cut oats from the Amish country just east of here.

Lots of fresh herbs at the market Sat., I dried them in the oven and have jars of basil, dill, parsley and sage.. My Rosemary plant is the only survivor of the "cat who climbs".

Since I have run out of freezer room and don't have a canner, I think I will dehydrate some veggies and fruits this weekend.
