Props to Anova, and, any sous vide tips?

I like to give a public thumbs up when I feel I've been treated well by a company. Recently I thought that a small piece was missing from my Anova circulator, thinking it may have been missing from the start but far more likely I lost it at some point. So I called Anova and asked them about it and sure enough, they agreed that something was missing. I wasn't looking for anything for free and told them that, but they immediately offered to send not only the little part, but the entire clamp assembly, free of charge.

I believe they're a relatively small company, having started up with a kickstarter campaign, but this didn't stop them from offering friendly and immediate help, at their expense. I appreciate being treated as a valued customer, and would recommend their product to anyone.

Fresh in my mind I put some hanger steaks "in the bath" the other night and they came out excellent. I'm finding that the more I resist the temptation to leave things warming for too tong, the more I'm happy with the results.

Seems a good time to ask newer adopters of the method what they find does and does not work for them. For me, the big one is don't extend cooking times. I've had success with long-cooked short ribs and duck legs, but aside from that I seem to be happiest with minimum cooking times. Anyone else?
