With the open concept, I don't think it matters that one corner of one room has dark cabinetry. You can have light walls and backsplash. Which floor plan are you doing? I prefer the first tile. It looks like it's got gray and beige, which will be easier to work with than the peachy tones of the travertine. That's kind of a Tuscan tile, which was popular in the 90s and still, unfortunately, is hanging around in tile shops. My goal would be to tone down the reds of the Bordeaux by letting the granite be the warmest element in the room. Ideally you want to go look at slabs and bring a sample of both floor tiles and the cabinet doors. You'd want to pick a slab that has a lot of cream like this one.

Without photos of the actual slabs you are considering, we cannot advise you. Those two granites are often named interchangeably, i.e one stoneyard will call it Bianco Antico and that same slab might be called Alaska White at another stoneyard (or White Delicatus or White Spring). Both of those granites can have a lot of mica or not a lot of mica (what you call metallic specs) depending on the slab. From a purely practical viewpoint, while more mica is more beautiful, mica is prone to flaking, and your counter surface--if it has a lot of mica--may feel rough in patches (not visible roughness, just have some rough patches when you run your hand across). This may or may not bother you. Or you may love the sparkle of the mica so much (a lot of people do) that you don't mind those areas of roughness. I would not mind them at all, but we have seen some posts from people complaining that their counters are not 100% smooth.

Our house is a split level and was built in 1990, but it almost felt 70's to me when we moved in (3 years ago). We removed both walls dividing the kitchen from the rest of the space on the main floor. It is now one open squarish room. It has an 11-foot ceiling at its peak, with a beam running down the middle of the peak. White walls, white ceiling, dark grey-brown wood floors. This is our main common space room. I would say our vision is clean lines, warm Scandinavian, beach/industrial. Right now our room feels very cold to me. I would like to bring in some warmth (literally and figuratively). We live in a beach town, but not in a beach house. But the beach is part of my inspiration, I was hoping for a driftwood look to the cabinets, but I think the lighter grey is looking a bit washed out. As much as I love the darker grey, I am still thinking it might be too big of a contrast to the rest of the room. Right now, the cabinets are all that brown color, and the room definitely looks rather heavy in the kitchen corner. Then again, the dark grey could make a nice statement.

Cambria has many options that are lighter in hue than Swanbridge. Cambria's website has a search tool you can use to filter by hue and style. Patterns seem to be arranged from lightest to darkest and if you look at the suggested coordinating paint colors it might give you a clue as to whether the pattern color leans more cool or warm. You can either order samples online or borrow samples from a dealer to see how they look in your space with your cabinets.
